最近好似整千層糕整上癮咁,繼早前的紅棗千層糕今日又來椰汁
千層糕,希望大家唔會食滯啦!
材料
木薯粉 250g
粘米粉 60g
糯米粉 15g
砂糖 220g
椰漿 400mL
水 235g
斑蘭葉 12塊
做法
砂糖加水煮溶放涼後平均分成2等份
粉類混合加入椰漿拌勻後過篩再平均分成2等份


斑蘭葉洗淨切碎
取1/3斑蘭葉加入其中1份糖水榨汁 再取1/3斑蘭葉加入斑蘭汁再榨如此類推把所有斑蘭葉榨
完
把已榨好的斑蘭汁過篩
分別把糖水、斑蘭汁加入2份粉漿中攪勻

燒滾水用中火每層蒸5分鐘,最後一層蒸30分鐘(模內不用
掃油)

回覆刪除I have a question about cutting the cake. How do you make it look so beautiful? my result is pretty bouncy and sticky, and it stick on the knife even if I grease it. Thanks! Also, I don't know why my cake is not as green as yours...? it looks very nice in the picture.

不用客氣!要用多些斑蘭葉反複榨汁顏色才會靚,切的時候要一刀切下去不要拉刀,把刀是不需要塗油的
